This Pedro Ximénez isn’t just a wine; it’s a whisper of time, a warm embrace that envelops the soul.
With its mahogany hue and flashes of amber and iodine, it shines like an antique treasure in the light. On the nose, it reveals a depth and elegance, displaying notes of raisins, ripe dates, stalks, and a delicate citrus touch that gives the whole an unexpected freshness.
In the mouth it is pure silk: sweet, velvety, enveloping. Each sip leaves a lingering aftertaste, like a sweet memory that refuses to leave. A wine that is not just drunk—it is contemplated, felt, remembered.
Wine made from Pedro Ximénez raisins, hand-picked in late August and then left to dry in the sun on our drying racks for five to eight days.
During the drying process, special care is taken to ensure that dehydration is homogeneous and adequate, in order to achieve the desired sugar concentration. Finally, it is aged for 24 months in jars.
