This high-mountain filtered oil is born from centuries-old olive trees rooted deep in the sun-drenched slopes of the Sierra de Córdoba, a true reflection of the balance between tradition, technique, and landscape. Carefully crafted with a predominance of the Picual variety, nuanced by Hojiblanca and a subtle touch of Arbequina.
Olives freshly picked from the tree at the beginning of October, milled the same day to preserve their freshness and properties to the fullest. After cold extraction, the oil is gently filtered to obtain a clean, bright, and stable texture, without losing any of its sensorial richness, presenting lively aromas of green olives, fresh leaves, vegetables, and light fruity notes. On the palate it is harmonious, with a balanced bitterness, elegant spiciness and a vegetal finish that adds character without being overpowering.

Tasting Note:
On the nose, a mixture of ripe and green notes is detected, with very prominent aromas of tomato plants and tomatoes, along with notes reminiscent of aromatic herbs such as oregano and basil.
It is the perfect balance between sweet, bitter, and lightly spicy.
