From the ancient olive trees that crown the Sierra de Córdoba, where the high mountain climate defines its character, comes this unfiltered oil, a sincere and powerful expression of the fruit and the earth. A blend of selected varieties results in a complex and vibrant profile.
When the olives reach their peak, in October and on the day of harvest, the olives picked are milled directly from the tree, ensuring maximum freshness. The process continues with an initial cold extraction without filtering, preserving natural particles that intensify the aroma, texture, and flavor.
With an intense green color with golden hues and a cloudy, bright body, this EVOO displays a rich aromatic palette: fresh olives, green leaves, vegetables, and notes of ripe fruit. On the palate, it is round and elegant, with a harmonious spiciness and balanced bitterness. Flavor from the first drop to the last.
Oil Variety: *Coupage of picual/picudo, some hojiblanca and minimum arbequina.

Tasting Note:
On the nose, a mixture of ripe and green notes is detected, with very prominent aromas of tomato plants and tomatoes, along with notes reminiscent of aromatic herbs such as oregano and basil.
It is the perfect balance between sweet, bitter and slightly spicy, the suspended particles give it a unique aroma and flavor.
Pairing:
Eat raw. Especially recommended in salads, grilled vegetables, cured cheeses, sausages, toast, or simply for dipping bread.
