In the heights of the Subbética, where olive trees coexist with untouched biodiversity and time seems to stand still, this Coupage EVOO is born — the result of an expert selection of varieties, harmonized with mastery.
The olive trees, many of them centuries old, grow between 700 and 1,000 meters above sea level, embraced by a mountain climate that imprints character on every olive. Harvest begins in October, and only fruit picked directly from the tree is cold-pressed on the same day, preserving all its freshness and richness.
Each variety contributes its unique note to this natural symphony: structure, elegance, nuances… The result is a bright yellow-green oil with a complex aromatic profile: fresh vegetables, aromatic herbs, and fruits intertwine in a balanced and vibrant experience.
Stored under a nitrogen atmosphere in stainless steel tanks, it retains its authenticity from the mill to the table.
Oil Variety: Coupage* of picual, a touch of hojiblanca, and a small amount of arbequina.
Origin: Córdoba
Tasting Note:
On the nose, it reveals a blend of ripe and green notes, with prominent aromas of tomato and basil, alongside hints of peach and aromatic herbs such as oregano. On the palate, these flavors persist retronasally, accompanied by a slight peppery finish.
It is the perfect balance between sweet, bitter, and lightly spicy.

A balanced oil for raw consumption. Especially suitable for tomato salads, gazpachos, salmorejos, cooked vegetables, pasta salads, dressed cooked legumes, and toast.
