In the Sierra Cordobesa, where the solid soil and the Andalusian sun give character to the fruit, this Picual single-varietal Extra Virgin Olive Oil is born, an intense expression of its origin.
Harvested in late September, early in the harvest, Picual olives are picked directly from the tree and cold-milled the same day, preserving all their strength, freshness, and complexity. The result is an oil with a strong personality, a marked bitterness and a subtle spiciness, full of nuances that linger on the palate.
Its profile stands out for its high content of antioxidants and polyphenols, providing not only flavor but also a healthy character. With a luminous green hue, it displays powerful aromas of olive leaves, tomato plants, wild herbs and green nuts.
Stored under a nitrogen atmosphere in stainless steel tanks, each drop maintains its purity and potency.

Tasting Note:
Intense fruity aroma of green olives reminiscent of green tomato and apple plants, fig trees, olive leaves, and green nuts. Sweet tones are detected at the entrance of the mouth, passing to a certain bitterness on the sides, a slight spiciness on the finish, and characterised by notes of green fruits in general.
Pairing:
It is a good complement (used raw) to preparations with intense flavors such as game meats, seafood, stews, or grilled vegetables, as well as sausages and strong cheeses, salads, and toast. It gives a different touch as a final seasoning to freshly baked pizzas and is recommended for fried food as this variety is the one that best resists heat. It is suitable for the preservation of raw or cooked food.
