Native to North Africa and spread by ancient Mediterranean civilizations, this flower has traveled through centuries to become a symbol of flavor and elegance in cuisine. Its name, inherited from Arabic, refers to its leaves as “tongues of the earth.”
From temperate fields where the soil intertwines with ancient knowledge, this refined and noble edible flower emerges. Selected one by one at their most tender moment, when the heart reaches its peak of flavor and texture. With soft notes, lightly sweet, with a mineral and vegetal echo reminiscent of damp earth and the Mediterranean breeze.
Slowly confited in extra virgin olive oil, without rush and without artifice, preserving its vegetal essence intact and maintaining a delicate balance between firmness and creaminess, with a smooth and enveloping texture.
